Earl Grey and Cardamon Melts …

Ingredients:

125g plain flour
1 tablespoon of Earl Grey Leaves or empty a bag
1 teaspoon of ground cardamon seeds
pinch of salt
65g unsalted butter
35g caster sugar
A drop of vanilla essence

Method:

With a pestle and mortar grind the dry ingredients, tea, salt and cardamon. Grind into granule formula rather than powder.

In a medium size bowl combine the sugar, butter and vanilla essence and beat until pale and fluffy. This bit gets interesting, add the flour gradually, to a warm a stiff dough, if it becomes a bit stubborn add a tablespoon of warm water, which will help.

Roll the dough into a long log, wrap in some parchment paper and pop into the freezer for an hour.

Preheat the oven to 180c. Cut the frozen log into quarter inch cookies and spread out on a baking sheet. This should make approx 20 mini biscuits. Cook in the oven for 12 - 14 minutes until golden.

They really do melt in your mouth and are great served with ice cream or lemon posset.
